COOKING with STEVIE
A simple preparation that is perfect for those who prefer a dessert that is not too sweet.
Peel, core and slice your apple. You want a nice tart granny smith or similar variety.
Make a mix of cinnamon and sugar. The usual ratio is 3 parts sugar to 1 part cinnamon, but you can adjust to taste. Sprinkle the mix on a plate, and place your apple slice on it. Press down hard so the mix coats the apple well.
Put your coated apple slices on a baking sheet and place in a medium hot oven.
Bake until the apples are soft and the sugar begins to caramelize.
While the apples are baking, shred your white cheddar cheese. Real cheddar is white, and it will look much better than the orange stuff, but if you can't get it, make sure that the orange cheddar is as sharp as they sell.
Sprinkle the cheese on the baked apple slices, and then return to the oven and set it to broil (so the heat comes from the top). It will only take a few minutes for the cheese to melt on the apples, and then you are ready to serve.
