Medium thin slices of well trimmed, beef tenderloin.

While many of my food ideas are based on my extensive travels, this one originated as a work of fiction. L.E. Modesitt Jr.’s “Recluse Saga” is an extensive collection that spans some 18 books. The scale of the story is such that there is plenty of time for the author to tantalize us with hints of the foods being served. Burkha is described as being super spicy meat in a brown sauce over noodles. Sounded good to me, so I used it as the inspiration for this dish.
