Medium thin slices of well trimmed, beef tenderloin.
The meat is good enough and thin enough that a few seconds in a hot pan is all it needs.
Flip and season the meat, being careful not to over cook.
Buttered flat noodles, with plenty of black pepper.
The sauce is a beef and cream reduction with habanero chipotle and paprika.
While many of my food ideas are based on my extensive travels, this one originated as a work of fiction. L.E. Modesitt Jr.’s “Recluse Saga” is an extensive collection that spans some 18+ books. The scale of the story is such that there is plenty of time for the author to tantalize us with hints of the foods being served. Burkha is described as being super spicy meat in a brown sauce over noodles. Sounded good to me, so I used it as the inspiration for this dish.
