Sauté sliced leeks in butter.
Add chopped shrimp to leeks once they are soft.
Carefull to not overcook the shrimp.
Add a splash of Vermouth and let it reduce to nothing while stirring well.
Put shrimp mixture in buttered pan (or pie shell) and cover with egg wash.
Add sharp shredded cheese (here manchego) and make sure egg wash coveres it all.
Bake until an inserted knife comes out cleanly. Serve hot or cold.
This combination of flavors is so much fun you will find yourself using it far beyond this basic quiche recipe. It is so simple that there is only one tip or trick to watch out for. Make sure your egg wash (eggs and milk) are well spiced. Salt and pepper at least, but a little curry powder would not be amiss.
